what to serve everyone for dinner. Opening the refrigerator door, you see it.
The pizza box delivered to your front door as the clock was ticking down the
minutes to the new year!
Lifting the lid, you spy just a few pieces left. Not enough for everyone. Do you
throw it away? NOOOO!!!! Try this idea, instead, as I suggest you create
a fabulous Italian omelet!
The fillings for omelets are usually some kind of cheese, meat and veggies.
Isn't that what is on your pizza? Plus, you have all the seasonings from a
bit of sauce! So, peel the crust away from the toppings, place on a
microwaveable plate and heat for roughly 15-20 seconds. You are merely
warming it up. You don't want it to get gooey as it will heat up even further
once you slide it on top of the cooked eggs.
In the meantime, get out your eggs and whip up a basic omelet. When the
eggs have set, place your pizza topping on the one side and flip the other
half of the eggs over it.
sauce in the microwave and pour over the top.
Plate it with a few cheese sprinkles on the top just to add more appeal.
And there's dinner!!! Looks wonderful... tastes amazing! When you try this,

But if I snuck off in a corner to eat it by myself, then there would have absolutely nothing to serve for dinner! There are only so many times a week I can use the "puppy dog eyes" to get darling husband to order take-out for us!! LOL

Good to hear from you, Lynn. Trust me, there were many other things that were only meant for my mouth and my expanding waistline!! I am so thrilled that my "boys" are into healthy as we have now designated Christmas Eve and Christmas day for bringing out all the junk. I thought I might have gotten away with not making Christmas cut-out cookies this year but noooooooo! There I was Christmas eve night rolling out the dough and decorating them with icing and sprinkles. Apparently, it's just not Christmas without them.

I really like your recipe for leftover pizza and will have to try it sometimes, if we ever have any left. My 14 year old son is on a growing spurt and eats everything in sight!
ReplyDeleteHa, ha.... you will have to wait until you're empty nesters, like my husband and I are! I remember those days of searching through the 'fridge. Knowing you just bought that bag of shredded Mexican cheese. Only to find the empty bag scrunched waaay in the back. Humph! There weren't your idea of making tacos for dinner that night!
